The Local Kitchen and Square One have a launched a competition for the next great food business. The application deadline is August 15.

Story Behind Risotto 
Risotto, a quintessentially Italian dish, and yet the Romans only used rice medicinally and it was the Arabs during their tenth century occupation of Sicily who began growing it for food.
